1 onion, chopped
2 green onions, chopped
2 cups rice
1 cup tomato, chopped
1 small handful diced dried fruit (currants/apricots/peaches/etc.)
1 large handful chanterelle mushrooms
1/2 pound squid, cleaned and sliced into rings
2/3 pound shrimp, peeled
4 cups water
olive oil
cardamom
cinnamon
corriander
salt and pepper
Fry onions in oil, then add rice and cook until translucent. Stir in tomato, fruit, mushrooms, and squid, then salt and garam masala. Add water, cover, and simmer for 20-30 minutes. Half-way through, place shrimp on top of rice.
