Eggs Colby

Breakfast for two. Serve the eggs over the beans, with tortillas, salsa, and bananas on the side.

Black Beans with Shrimp

1 leek (the white part, diced)
1 clove garlic, minced
olive oil
salt
cinnamon
paprika
1 can black beans
4 ounces beer
1/3 pound small shrimp, peeled
1/2 cup raisins

Fry garlic and leek in olive oil over medium heat. Season with salt, cinnamon, and paprika. Stir in beans, shrimp, raisins, and beer. Cook on low heat until shrimp are done and the beans thicken.

Omelette

4 eggs
1/2 cup grated Gruyére
1 tablespoon water
1 tablespoon butter

Beat eggs with water. In a large skillet or nonstick pan, cook eggs in butter over low heat. Add cheese when the omelette begins to set on top. Fold, cut in half, and serve over beans.

Flambéed Bananas

2 ripe bananas
2 tablespoons butter
2 tablespoons brown sugar
cardamom
cumin
tequila

Halve bananas lengthwise and season with cardamom and cumin. Fry in butter, flipping once. Sprinkle with sugar and flambé with tequila.
