Garden-fresh Pasta and Salad

Fresh Tomato Sauce
Ingredients 1 pound tomatoes
1 handful basil
1 handful parsley
2 cloves garlic
1/4 cup olive oil
1-2 tablespoons blue cheese (optional)
salt and pepper
Recipe Put everything in a blender and purée. Serve at room temperature mixed with spaghetti or capellini.

Serves 2-3.

 

Salad
Ingredients cucumber
onion
red bell pepper
cilantro
olive oil
balsamic vinegar
salt and pepper
Recipe Chop cucumber, onion, and pepper into wedges and mix. I prefer roughly equal proportions, but vary the quantity of these ingredients as desired. Mix in chopped cilantro, and dress with olive oil and vinegar. Top with a little salt and pepper. For extra edge, consider a little ground corriander seed or crushed red pepper.
