spaghetti or perciatelli olive oil clove garlic anchovies grated parmesan or romano cheese crushed red pepper, salt and pepper tomato sauce or puréed tomatoes |
| Recipe | Sauté garlic in olive oil, add 1 or 2 mashed anchovies. Coat freshly boiled al denté pasta with this mixture. Blend in a little tomato sauce and then lots of cheese -- the proportions should be such that the pasta is well-coated but essentially dry. Season to taste. |
