1/2 red onion
1 red bell pepper
1 jalapeño
1 tomato
cilantro
juice of one lime
dash salt
Dice ingredients, and lightly mash them together. Chill together for half an hour, or overnight.
2 garnet yams, peeled and diced

cheese, shredded
chicken sausage or other cooked meat

Chop and steam yams or sweet potatoes. Cook red onions and mixed peppers in oil with salt, pepper, cumin. Fold in potatoes, cook for a bit longer. Warm tortillas on a cast iron skillet and top with potatoes, cheese, and meat. When the tortilla is toasty and the cheese is melted, add a bit of salsa, fold and eat.
Or, just serve yams, cheese, and meat with steamed tortillas.
2 cups rice
4 cups water
1 onion, chopped
1 big bunch cilantro, chopped
salt
Steam rice in water. Stir in finely chopped mixture of cilantro, garlic and onion. Let sit ten minutes.
